Healthy Cornbread Muffins

Ingredients
1.5 cup cornmeal1.5 cup whole-wheat pastry flour1 tbsp baking soda.5 tsp salt.5 cup unsweetened applesauce1.25 cup soy milk.5 cup maple syrup.25 cup canola oil
Directions
1. Preheat oven to 325 degrees F. Lightly grease muffin pan.
2. Combine cornmeal, flour, baking soda, and salt in large bowl.
3. Stir in applesauce, soy milk, and maple syrup. Slowly add the oil while stirring.
4. Pour mixture into muffin pan
5. Bake in oven until a toothpick inserted in the crown of a muffin comes out clean, about 15 minutes.
