2 Mahi fillets10 medium shrimp6 medium scallops4 medium potatoes sliced 1/2" inch thick1 medium onion sliced thin1 small green pepper sliced1 medium tomato2 cloves of garlic2 small bay leafs2 Tbsp chopped parsley1 Tbsp paprika1 Tbsp piri-piri (Frankies sauce)1/2 Tbsp salt4 Tbsp olive oil3 cups of water
20 Minutes before sprinkle salt on fish.
Peel, wash and cut potatoes.
In a bowl mix onion, green pepper, tomato, garlic cut in half, the bay leafs, parsley, paprika, hot sauce, salt and olive oil.
Mix well.
In a pot make make layers:
1 onion mix
2 potatoes
3 onion mix
Pour the water and bring to a boil on stove top, let cook for 5 minutes (after it starts boiling) on medium low.
Add fish let cook for 5 minutes.
Add scallops and shrimp, cook for another 5 minutes.
Check if potatoes are cooked and serve.
