Deli-style tortellini salad

Ingredients
2.67 cups cheese tortellini1.5 cups broccoli florets1 large carrot, thinly sliced1/4 cup white wine vinegar2 tbsp EVOO1 tsp dried basil1 tsp dijon mustard1/4 tsp black pepper1/8 tsp garlic powder1 medium red pepper, cut into strips
Directions
Cook tortellini according to package directions, omitting any salt. Add broccoli and carrot for last 3 minutes of cooking. Drain, rinse with cold water, and drain again.

For dressing, combine vinegar, oil, basil, mustard, black pepper, and garlic powder. Cover and shake well.

Add sweet pepper to tortellini mixture and pour dressing on top. Toss to coat.

Makes 4 servings.
