Set oven to broil. cover a pan with aluminum foil, spray the pan with pam spray. Season fish as desired and place in the oven to broil.
While waiting for the oven to preheat and while fish is cooking make the sauce.
-saute' chopped onion in 1 tbsp olive oil until lightly browned. Add scallops, saute' for 5 minutes. Remove scallops(do not want to over cook while cooking the sauce), add crab meat, stir, then add cream mix (Mix half and half cream with 1 tbsp corn starch, and 1 tbsp of dijon mustard, add garlic powder and salt). Saute with the crab meat until the sauce thickens. Add the scallops. continuously stir. Once fish is done remove from oven. Place over a bed of rice, pour sauce on top and serve. May also be served with asparagus or another green vegetable.
This recipe serves 2 because my husband and I are big eaters...but it can be split to 3 servings.
