Super Simple Lentil Soup with Ham

2 Tbsp Olive Oil1 Onion, Large, Chopped3 Garlic Cloves, minced3 Celery Stalks, chopped4 Carrots, Large, chopped6 oz. Ham Steak1/2 tsp. Ground Sage1/2 tsp. Ground Thyme1/2 tsp. Salt1 Cup Lentils, Dry6 Cups Chicken Broth
Makes 6 servings (1 cup+ each)!
Heat oil in soup pot and cook the garlic, onion, celery and carrots until soft - about 10 minutes. Add seasonings and ham and cook for another 5 minutes. Add chicken broth and lentils (rinsed and sorted). Bring to a boil, then simmer on low for about 30 minutes. Add water if it gets too thick. Ready to eat! Also freezes well if you don't want to eat the same thing for a few days! :)

Made this tonight and loved it! I didn't have celery, so I used celery seed. I also added a little curry powder and Mexican seasoning instead of the thyme. No other changes, I promise! This soup turned out delicious, hearty and filling! I'll be making it often during the cold/rainy seasons! Thanks!! - 9/5/14
