Easy Cabbage Stew

Ingredients
1 large head of cabbage1 lbs ground beef 1 onion1 10oz bag frozen mixed vegetables1 Large can of V-8 juice1 TBS Olive Oilsalt to taste
Directions
dice cabbage into bite size pieces.
sautee cabbage in large pan with olive oil
remove from pan and set aside
cook ground beef in pan along with chopped onion and drain the fat.
add mixed vegetables, cabbage, and V8.
Let simmer for 10 minutes
