I enjoyed this but it was missing something.... I expected a full flavor, but this was bland...I will just have to try again and tweak some things...

    ***UPDATE 3/29/09****

Added ~1Tbs chili powder at beginning and 2cups brown minute rice with cream cheese. The result was PERFECT! - 10/9/07

I added a jalapeno and some chopped onions! I put it over homemade tortilla chips! It was great! - 7/6/08

I used 3 thawed chicken breasts and everything else as indicated. I ended up cooking it on low for 11 hours and the chicken just shredded itself when I got home and stirred it all up! I added a spoonful of cream cheese separately per serving and it was delicious, served with tortilla chips. - 8/23/12

I didn't have cream cheese, so I substituted it with sour cream and all I can say is don't judge a dish by it's looks! It was delicious! - 7/29/11

My mom made this for dinner and I absolutely LOVED it!! I think the only difference was we seasoned the chicken before we put it in with everything else but either way this is a new favorite of mine =) - 6/23/10

I put a couple jalepenos in, but should have added more. It was really good, just needed a little more kick - 9/13/08

This was great! But, I agree it was very mild. I would add a little Mexican seasonings to give it some kick! Also, great tasting as leftovers (and I'm not a fan of leftovers). I served it both over noodles first day and taco chips for lunch the second day! - 6/5/08

This was great ... however ... if you want dairy free ... add honey to each individual serving to your likeness. It's awesome.
In addition ... I used sour cream instead of cream cheese and it was fab!
I also added jalepenos after to my dish.
    Great goto recipe. - 7/3/15

If the salsa is mild, I'd use an envelope of reduced-sodium taco seasoning to spice it up a bit. I also like to mix in a chopped sauteed onion and minced clove of garlic with the rice; they help to bring out the nutrients. - 6/7/13

This recipe is great! I love that the chicken can be frozen (sometimes I forget to thaw the night before) and you can just keep the salsa and black beans in the pantry. I have made this a few times. It is perfect for the family. We have put it over lettuce and spiced up our individual portions! - 6/1/11

I used Quorn Meatless Chik'n Tenders in this recipe & added extra jalapenos - it was so easy & tasted great. I would definitely make this again. - 4/2/10

This is a very good. So easy to remember too! I ate it with and without the cream cheese and the cream cheese just adds to it. - 2/2/10

Unbelievably yummy. We served it on one serving of tortilla chips with a litle low fat sour cream. - 2/2/08
