Crockpot Chicken with Black Beans and Cream Cheese

4 Frozen boneless skinless chicken breast halves1 can black beans, drained1 can corn, drained1 -15 oz jar of your favorite salsa4 oz fat free cream cheese
Place all ingredients EXCEPT for cream cheese in the crockpot (yes, the chicken goes in FROZEN). Cook on high 4-5 hours.
Then, put the cream cheese on top, and leet sit for 1/2 hour. Serve!
Most people were serving over noodles or tortilla chips, or brown rice. One person made double and then used the leftovers as filling for a wrap. Yum!

I enjoyed this but it was missing something.... I expected a full flavor, but this was bland...I will just have to try again and tweak some things...

Added ~1Tbs chili powder at beginning and 2cups brown minute rice with cream cheese. The result was PERFECT! - 10/9/07

I used 3 thawed chicken breasts and everything else as indicated. I ended up cooking it on low for 11 hours and the chicken just shredded itself when I got home and stirred it all up! I added a spoonful of cream cheese separately per serving and it was delicious, served with tortilla chips. - 8/23/12

This recipe is great! I love that the chicken can be frozen (sometimes I forget to thaw the night before) and you can just keep the salsa and black beans in the pantry. I have made this a few times. It is perfect for the family. We have put it over lettuce and spiced up our individual portions! - 6/1/11
