Easy Salmon Croquettes

Ingredients
2 cups canned salmon, drained, chopped4 Tbsp light mayonnaise2 cups dry bread crumbs, divided1 cup scallions, chopped4 Tbsp parsley, fresh2 egg whites, beaten until foamyBlack pepperHot saucesalt to taste
Directions
In a medium bowl, mix 1 1/2 cups of bread crumbs, salmon, scallions, parsley and seasonings. Add mayonnaise and egg, fold all ingredients together.
Shape mixture into patties and place on lightly greased baking sheet or non-stick pan.
Ightly sprinkle the remaining bread crumbs on the patties
Place pan in broiler 4-6 inches away from heat. Allow croquettes to cook for 5-7 minutes each side or until golden brown.
Once browned remove, allow to cool and enjoy!
