Ingredients
2 Tbsp Extra Virgin Olive Oil1 medium eggplant, diced4 small zucchini, diced1 med onion, sliced thin5 cloves garlic1 (28 oz) can crushed tomatoes2 cups sweet bell peppers
Directions
Heat EVOO in dutch oven. Saute onion slices until tender. Add garlic and briefly saute. Add other ingredients and bring to a boil. Reduce heat, cover and simmer for 40 minutes or until liquid is mostly evaporated. Serve 1 cup per serving.
