Chicken & Asparagus Pasta

3 cups whole wheat pasta12 spears asparagus1/2 chicken breast, bone and skin removed 1-1/2 cups fresh mushrooms, pieces or slices 1/2 cup low sodium chicken broth1 tbsp extra virgin olive oil1/4 cup feta cheese, crumbled1 medium tomatoPinch of pepper, red or cayenne
Cook pasta according to package directions.
Meanwhile, cut chicken into bite-sized cubes and place in skillet with olive oil.
Cook until partially done.
Add asparagus and mushrooms, continue cooking until chicken is done.
Add chicken broth and cover pan, cook until asparagus is crisp tender.
Add pasta, red pepper flakes (to taste), and feta cheese. Remove from heat.
Serve with fresh diced tomatoes to garnish. Enjoy!

Overall very good. At first it was a bit bland, but with added garlic, onion, lemon juice, and red pepper flakes, it was quite tasty. Next time, I think I'll make the liquid into a thicker sauce to pour over everything. It contained great flavor, it just wasn't used to its full potential. - 6/3/08

I loved this, and I love that you can add any vegetables you want to make it yummy. I added yellow squash, asparagus, and carrots. It looked pretty and tasted wonderful. My husband walked into the house and said it smelled like a restaurant. With all of the added veggies, we have a ton of leftovers! - 7/8/09

This dish reminds me of one i have had for years. The pasta I use is Orzo (rice like pasta) and i cook shrimp instead of chicken. I sauce is a mix of minced garlic, lemon and lime juice then I saute the shrimp in the sauce. Both meals are super light and delicious! Adding cilantro is great too! - 7/19/09

I, too, added onion and garlic. Taking heed from MUDDER91, I used 1 1/2 cups dry whole wheat penne and it was still a lot of pasta. Next time I'll use much less pasta (I honestly can't believe I actually said that and meant it!). I also like the sun dried tomato idea! I LOVED this one!!! - 5/21/08
