Cherry tomato and Nopales salad

Ingredients
4 cups of cherry tomatoes, sliced in half3 cups of nopales, chopped1/2 cup of red onion, chopped1/3 cup of cilantro, chopped1 Tbsp of Newman's Own Olive Oil & Vinegar dressing1 tsp of salt5 oz Cacique Queso Fresco
Directions
Toss everything in a bowl, mix, and serve.

Makes 7 1-cup servings.

    Nopales are cactus leaves. You can get them right off of cactus if you know how to pick them. You just have to dethorn them, chop them, boil them, and drain them. Or you can go to the ethnic section of the grocery store and buy a jar ready to drain and eat. =) that's what I do.
