1 Cup Canola Oil3 Eggs2 Cups Sugar3 Tsp Vanilla Extract2 Finely Shredded Zucchini (Do not peel, just wash and cut ends off)1 Tsp Baking Powder ( use with allpurpose flour only)1 Tsp Salt (use with allpurpose flour only)1 Tsp Soda (use with allpurpose flour only)3 Tsp Cinnamon3 Cups Flour1/2 Cups Chopped walnuts or raisins (optional and not included in calories)Bake at 350 degrees F for 1 hour. Bake in 13 x 9 x 2 Cake Pan.
