Feta and Spinach stuffed chicken

*Extra Virgin Olive Oil, 0.5 tbsp Minced Garlic, 2 tsp Spinach, fresh, 2 cup (stems removed and leaves torn up)Boneless, Skinless Chicken Breast, 1 1/2 breasts *Athenos Reduced Fat Feta Cheese, 1/4 cupSeasoning to flavor (I usually use an Italian blend of basil, garlic, oregano, and parsley---not added to calorie calc)
Heat olive oil in a large skillet. Add garlic and saute over medium-low heat for 2 minutes, being sure not to burn the garlic. Add in spinach (stems removed) and saute until just wilted. Remove from heat and stir in feta cheese. Cut 1 whole breast in two and pound each half (should be three total) until flat. Add 1/3 spinach mixture to center of chicken breast and secure chicken in a pocket with toothpicks. Place in baking dish and season to taste. Bake at 350 degrees for about 20-30 minutes or until chicken is no longer pink. Goes great with veggies or any other side.
