Thai Watermelon Salad

Ingredients
6 cups diced seedless watermelon1/2 cup chopped fresh cilantro1 cup dry roasted salted peanuts1/8 tsp cracked black pepper1/2 tbsp minced fresh ginger1 clove minced fresh garlic1/4 cup seasoned rice vinegar1/4 cup watermelon juice (i use a reamer on the rinds)1/2 tbsp sesame oil1/4 cup extra virgin olive oil1/2 tsp light soy sauce
Directions
Combine watermelon, cilantro, and peanuts in a large bowl.
Wisk together remaining ingredients in a small bowl.
Add dressing to watermelon mixture a little at a time, tossing to coat.
Chill at least 1 hour before serving.
