Apricot Syrup

Ingredients
4 Cups Apricot Puree (halved apricots plus 1 cup of water)3 Tbsp Lemon Juice (fresh if available)4 Cups Sugar
Directions
Blend Apricots and water, mix puree with lemon juice real well. Stir in sugar until disolved. Put on stove top and bring to a boil. Just before boil point, add 2 Tbsp margarine/butter - prior to foam. Bring to a boil and stir constantly. Boil for 5 minutes.

Pour into jar that has been boiled for 10 minutes and put lid (also boiled for 10 minutes) and ring on, screw hand tight.

Makes 4 pint jars. Can double recipe.
