The Accidental Vegetarian's Banana Dahl

Ingredients
1 onion finely sliced4 garlic cloves, chopped1 inch piece of fresh ginger finely chopped2 tbsp olive oilpinch of turmeric1.25 cups of lentils (washed and drained)3 cups of stockpinch of ground cuminpinch of ground corianderpinch of ground curry3 bananas, thinly slicedpepper to tastecilantro for garnish if desired
Directions
1. Fry onion, garlic, and ginger in olive oil for about 10 minutes over low heat. Add the turmeric and cook for another 1 minute
2. Add the lentils and fry for 1-2 minutes
3. Add the stock and bring to a boil, simmer for 15 minutes
4. Add the spices and cook for a further 10 minutes
5. Gently fold in the banana slices directly before serving
6. Garnish with cilantro leaves and eat with bread

Makes approximately 6 servings of 2/3 cup
