English cucumber1 green bell pepper1 garlic clove1 quart low sodium tomato juice4 med tomatoes4 tsp red wine vinegarSalt, pepper & hot sauce to taste
Directions
Combine cucumber, bell pepper, garlic in food processor an coarsely chop. Add tomato juice and pulse until the vegetables are finely chopped. Transfer to a large bowl and stir in the diced tomatoes and vinegar
