Simple Zucchini Omelet

Ingredients
1 small fresh zucchini or summer squash sliced into thin strips = 1/2 cup1 large brown egg1/4 cup serving egg white1 ounce cheddar cheese
Directions
Wash, peel ,thinly slice small zucchini or summer squash to 1/2 cup
In non stick skillet "saute" in 2 tbs water until soft...about 2 min
drain any remaining water
scramble 1 whole egg and 1 egg white and pour over sauteed zucchini
Cook on medium low heat until omelet is set- about 3 minutes
Shred 1 ounce of cheddar on top just before folding over and serving
Season to prefernce possibly with pepper or fresh parsley
