Cook tortellini and set aside.
In a pan, spray the butter, and add chicken. Cook through. Let rest for a few minutes, then slice. Return to pan, tossing with garlic and mushrooms.
Deglaze the pan with wine. Add the butter and cream, and stir until incorporated. Stir in parmesan and blend well. Add pasta, tomatoes and spinach. Heat through.
Makes 4 servings.
