Spinach and Bean Salad

Ingredients
* Beans, black, 2 cup * Apricots, dried, .5 cup, halves * Peppers, sweet, red, raw, sliced, .5 cup * Scallions, raw, 1 small (3" long) * Cilantro, raw, 1 tbsp * Peach Nectar, .25 cup * Olive Oil, 1 tbsp * Cider Vinegar, 2 tbsp * *Soy Sauce, 1 tsp * Ginger Root, 1 tsp * Spinach, fresh, 4 cup
Directions
1. combine first 5 ingredients
2. in another bowl, whisk together nectar, oil, vinegar, soy sauce, and ginger
3. toss dressing with bean mixture
4. spoon over beds of lettuce
