Chicken Cacciatore Crockpot Dish

Ingredients
2 tsp Olive Oil6 chicken thighs (skinless)1 onion, chopped3 garlic cloves, minced 1 can mushrooms, rinsed1 cup fresh mushrooms1 can diced tomatoes (no salt added)2 cups bell peppers1/4 cup tomato paste1 tsp dried oreganoIn a large skillet, heat the oil and cook the onion and garlic, stirring till softened about 5 minutes.Transfer the mushrooms, tomatoes, peppers, tomato paste and oregano and let simmer for 5 minutes or till flavors blended. Lay chicken thighs on the bottom of crock pot and pour sauce on top of chicken. Cook on high for 4-6 hours. Serve over noodles, pasta, or rice. Calories in pasta are not included in calorie count.
