Low Everything Apricot Pork

Olive oil - Spray bottle without propellant2-4 4 oz Lean Pork Chops1/4 c Chopped Onion1/4 c Chopped Green Pepper1/4 c Chopped Red Pepper1/4 c Sugar Free Low Calorie Apricot Preserves1 tbsp Low Sodium Soy Sauce2 tsp Minced Garlic
Heat non stick skillet over medium heat. Coat pan with olive oil, add pork, cover.
Add peppers, onion.
Mix soy sauce, apricot preserves and garlic. Spoon over pork.
Cook approximately 6 mins on each side. Stir occasionally.
Serve over brown rice.
Yield: 2-4 servings ( serving size 1 pork chop 1 tbsp sauce.
