Caprese style omelet

Ingredients
4 oz grape tomatoes, halved2 oz fresh mozzarella, chunked1/2 cup egg whites (papetti)dried basil and pepper to tastefew shakes balsamic vinegar
Directions
Heat skillet over medium heat. Add egg whites.
While eggs are setting, sprinkle vinegar, pepper, and basil over tomatoes and cheese. When eggs are almost done to your liking, add tomato mixture and fold omelet over. Cook to desired consistency.
