Wild/Brown Rice & Barley Mushroom Pilaif

Ingredients
*Brown Rice Success, 1 cup1 lb fresh mushrooms1 medium onion, diced6 cloves garlic, minced1/4 cup wild rice(dry)1/3 cup barley1 cup chicken broth2 bay leavesParsley, oregano, salt and pepper, to taste6 Tbs. low-fat milk 1/2 C. chopped Celery
Directions
Prepare the wild riceand the brown rice per box directions. ( The wild rice will take 45 mins. to cook.) Cook the barley in 1C. stock til tender. Set aside. Place 1 Tbs. olive oil in saute pan. Heat on med. Add diced onion and celery. Saute 5 mins. Add minced garlic, 2 mins. Add sliced mushrooms, pinch of salt and sweat veggies, 4 mins. Add remaining spices, except parsley. Add cooked grains to mushroom/spice mixture and cook on low for 2-3 mins. Add milk and parsley. Stir to combine and til creamy. Serve with added salt(optional) and more freshly ground black pepper..
