Teriyaki Pork Stir-Fry

Ingredients
2/3c reduced sodium soy sauce1/4c packed brown sugar2 tsp peeled finely chopped gingerroot2cloves garlic, pressed1/4tsp red pepper flakes1lb boneless pork loin2c uncooked whole grain brown rice1 medium red bell pepper1 cup snap green beans (fresh)onion to taste1 can bamboo shoots1 cup bok choy
Directions
In small bowl combine soy sauce and brown sugar
whisk until blended, add finely chopped gingerroot, red pepper flakes, and pressed garlic . Cut pork loin into 1/8in strips and add to soy mixture, toss to coat, marinate for 15 min in fridge.

Meanwhile, cook rice per pkg instructions. Cut bell pepper into 1/4 in strips, chop bok choy into smaller pieces.

Heat 1/2 tsp of oil in skillet, removed pork from marinade, add to skillet, reserving marinade, fry 1-2 min or until pork no longer pink, remove from skillet and keep warm

use remaining 1/2 tsp oil in same skillet, add bell pepper, green beans, onion, bok choy and bamboo shoots, Stir-fry 2-3 min until veggies are crisp-tender, readd pork and remaining marinade, Cook and stir 1 min or until heated through.

Serve on top of rice.
