Chicken Philly Smashed Potato

1 Small Baking Potato3 ounces boneless, skinless chicken breast, cut into small cubes1/4 small onion, sliced1/2 cup raw mushroomsPam cooking spray1/8 cup Kraft fat-free shredded cheddar cheese1 tablespoon fat free sour cream Butter substitute spray
Bake the potato in the microwave. While it is cooking, saute the chicken breast, onion, and mushroom with Pam on the stove.
On a microwave safe plate, smash the potato flat. Spray with the spray butter.
Top with the chicken mixture and shredded cheese.
Microwave until the cheese is melted, about 15 seconds. Top with sour cream & enjoy!
