Salmon Patties

1 can (approx. 7 ounces) salmon 1 egg (sometimes 2 eggs)1/2 cup saltine crackers or Italian bread crumbs1/2 tsp. salt1/2 tsp. pepper (or lemon pepper is good too)1/2 onion diced1 celery rib dicedolive oil, enough to cover bottom of skillet with 1 pat of butter to add flavor
Remove skin and bones from salmon (optional - I leave it all); drain well. In mixing bowl, combine with egg, cracker or bread crumbs, salt, pepper, celery, and onion. Make patties about 2 inches in diameter; fry in buttered oil until brown on both sides about 10 minutes.
Sprinkle salmon patties with salt.
