1 Can Crushed Tomato (28 oz.)3 Cups Zucchini - diced2 Cups Summer Squash - diced1.5 Cups Raw Onion - diced1.5 Cups Peppers (use whatever kind you have)3 Cups Fresh Eggplant - dicedNot exact measurements. Use more or less of the veggies depending on your personal taste.
Directions
Put everything in a pan and cook until it's to your preferred doneness.

Add additional seasoning to taste.
