Egg, fresh, 1 large Zucchini, 2 cup, unpealed, shredded, and drainedCanola Oil, 1 cup Vanilla Extract, 1 tsp Granulated Sugar, 2.5 cup Flour, white, 3 cup Baking Powder, 1.5 tsp Cinnamon, ground, 1 tspBaking Soda, 1 tsp
Beat together eggs, oil, zucchini, and sugar. Then in separate bowl mix flour, baking powder, cinnamon, and baking soda. Add the dry ingredients to the wet and mix well.
Pour into two greased (and floured if you prefer) 2/3 full. Bake at 350 F for 45-50 min.
