Quick Black Bean Soup

2 15 oz. can reduced sodium black beans2 cloves garlic, minced1/2 cup bottled medium salsa2 cups reduced sodium chicken broth1/8 tsp. chili powder1/2 tsp. dried oregano1/8 tsp. cumin powder
1. Spray the bottom of a medium saucepan with vegetable spray. Bring to medium heat and add the garlic. Saute until soft.
2. Add the bean and mash with a potato masher to desired texture. Add the chicken stock, salsa, chili powder, oregano and cumin.
3. Bring to a boil, stir, and serve.
For a creamier soup, puree in a food processor or blender. Good topped with no-fat yogurt and scallions.
