Mix the flour, sugar, baking powder and cinnamon in one bowl. In another bowl, beat egg whites, then add the milk and applesauce. Combine dry and wet ingredients together.Spray PAM into pan. Heat the frying pan to medium temperature. Pour about 1/4 cup (or 1 ladle) of batter. When edges of the pancake are dry (about 2 min), flip the pancake. Cook another 1 minute and remove from pan.Top with light maple syrup, fresh fruit or apple sauce.
Makes 8 good size pancakes.
