Benihana Rice

Ingredients
1/4 cup chopped onion1/4 cup chopped carrots1/4 cup chopped green onion4 servings brown minute rice cooked and cooled1 tsp of salt (optional)3 TBS Country Crock Light2 eggs3 teaspoons olive oil1 med cooked boneless chicken breast1 teaspoon sesame seeds1 tsp pepper1/4 cup soy sauce1 clove minced garlic
Directions
Saute chicken until done and cut into small pieces. Scramble eggs and chop after cooking. Sauté chopped onion, green onion and carrots until done and mix with chopped scrambled eggs and chicken. Mix in steamed rice with vegetable, eggs and chicken. Add sesame seed and salt and pepper, stirring well. Add butter, garlic, and soy sauce into the mixture, stirring well until done. Makes 5 - 1 cup servings.
