Fresh Salmom Fettuccine

8 oz dry fettuccine1 tbs olive oil1 tbs all purpose flour2 cloves of fresh garlic, minced1/2 cup sliced red onion3 cups of grape tomatos, halved8 oz fresh salmon, cooked and flaked2 cups fresh baby spinach1/4 cup parmesean chease, grated8 oz skim milk1/3 cup fat free sour creamsalt and pepper to taste
grill the salmon, and flake it.
In a large non-stick skillet, over medium heat, add olive oil and sautee garlic until golden brown. aprox 1 min. Add flour and stir constantly. add milk and stir constantly, until thickened. Add tomatos and fresh baby spinach; Heat briefly. Set aside and keep warm.
Cook fettuccine according to package directions. drain. place in large bowl, and toss with salmon and sauce.
