Asian Ramen Cole Slaw

Ingredients
1 L bag Cole Slaw Mix2 Pkg. Oriental Flavor Ramen Noodles1 C. Toasted Almonds1 C. Sunflower SeedsDressing:1 C. Olive Oil1/2 C. Splenda (Sugar can be used, but changes nutritional info)1/3 C. White VinegarBoth Flavor Packets from the Ramen Noodles
Directions
Place Cole Slaw mix in a large bowl.
Crush ramen noodles in a sealed bag or just smash them in the bag they are in, but take out the flavor packets for the dressing.
Put the noodles, Almonds and Sunflower seeds in the bowl with the Slaw mix and set aside.
Wen ready to serve, put all ingrediants for the dressing in a blender and blend until smooth. Pour over the mixture in the bowl right before serving.
Eat immediately for a crunchy treat or leave in fridge overnight to soften the ramen noodles.

    Why so much oil? The flavors are still wonderful when you reduce the oil to 2 Tbs - plenty of oil to make the dressing stick to the slaw. And 2 cups of nuts! Ah! - 7/19/09
