Roxie's Calico Beans

Ingredients
1 lb lean ground beef1 lb bacon, crumbled1 c onion, chopped finely (or use minced onion)2 tsp salt1 1/2 cup brown sugar, packed2 tsp mustard1 c ketchup2 (15-16 oz) cans kidney beans1 (15-16 oz) can butter beans2 (20 oz) cans Bush's Pork 'n Beans (If you can't find Bush's you can substitute Van Kamp's but you have to add a little molasses.)1 (15-16 oz) can lima beans, drained4 tsp vinegar
Directions
Brown together ground beef, crumbled bacon, and onion. Put mixture in the removable crock of a crock pot. Add the rest of the ingredients and stir well. Bake in crock for 1 1/2 hours at 325 degrees. After baking keep warm in the regular part of the crock pot while serving. (Make sure you cook it all the way through before putting in the regular crock pot part.)

Note: This BARELY fits in a 5-quart crock pot. To avoid spilling when baking you may want to use a 6-quart crock pot.

    I make similar beans, but don't get 80 servings of 1/2 cup. A five qt. crockpot would hold 20 cups, so you would get 40 servings of 1/2 cup. - 7/12/11
