Peterson Leek and Potato Soup

Ingredients
2 potatoes, peeled and cut into 1/2 inch squares4 leeks, greens removed, bottoms sliced thin3.5 cups fat free milk
Directions
Peel potatoes. Cut in 1/2 inch squares and place in bottom of big soup pot. Cut greens from leeks, slice white portion thin and add to pot. Add 3.5 cups of milk. Simmer on stove . Do not let it come to boil! Simmer for 30 mintues or until the potatoes fall apart when pushed with a fork.
If you like thick soup, place the soup into a blender. Can be eaten hot or cold.
