Ingredients
• 2 pounds cherry tomatoes • 3 tablespoons extra-virgin olive oil• sea salt and freshly ground black pepper
Directions
Heat the oven to 400 degrees F.
Place the tomatoes on a sheet pan and drizzle with the olive oil. Season with salt and pepper. Roast until the tomatoes collapse, about 10 minutes.
Makes 8 servings approximately 7-10 tomatoes per serving.
