Cabbage Casserole

1 medium head of cabbage, chopped1 pkg ground pork1/2 cup onion1 tbsp garlic powder1/2 tbsp pepper2 cups uncooked long grain rice48 fl oz (1 large can) tomato juice1 cup water
Brown ground pork with onions, garlic powder and pepper. Remove from heat and mix in uncooked rice.
In a large oven safe casserole dish, layer cabbage, and spoon rice mix over top. Add water. Add tomato juice, making sure to cover as much rice as possible, to make sure the rice absorbs the tomato juice and doesn't burn. Bake in the oven at 350 F for an hour to and hour and a half, checking the rice at an hour to see if done.
Makes 10 servings of approx 2 cups each.
Please note: Different rices required different times. I like a lot of garlic and pepper, you may not want to add that much. Also, this recipe can be made with minute rice, just don't add the water and check to see if it's done at 45 minutes.
