Mediterranean chickpea salad

Ingredients
1 can chickpeas1c mint, loosely packed and chopped2T lemon juicegrated lemon rind - 1 lemon1/4 c olive oil1 clove garlic, minced2oz manchego cheese, choppedSalt and pepper to taste2c arugula
Directions
mix all ingredients except arugula in a bowl, toss to coat. Let sit for 15-30 minutes or cover and sit overnight.
Place arugula in a bowl and spoon chickpea mixture over top.
