Southwest Turkey Soup

Ingredients
3 oz. turkey breast 3 cups chicken broth or bouillon1 cup spinach1 cup red pepper, sliced1/3 cup onions3 cloves garlic6 oz white wine1 tbsp rice vinegar1 tbsp cilantro1/2 Haas avocado, without skin and seeds1/4 cup jalapeno pepper, sliced
Directions
Roast turkey breast, chop in small pieces, then saute with garlic and onions to bring out flavor.
Heat up broth in large soup pot.
Add veggies (except avocado) to saute pan and saute in olive oil with turkey.
Add white wine and rice vinegar.
Transfer all veggies and turkey to broth. Simmer for 15 minutes. Slice avocado and place on top of bowls.
Serve and enjoy!

    If you criticizers look carefully the recipe notes 3 cups bullion - if you take 3 cups of DRY bullion this will give you that crazy sodium count. Everyone is so quick to criticize instead of actually giving something a try. - 3/20/09

    You could use chicken instead of turkey and make your own broth, that would help with the sodium content. If you buy low sodium broth, you could also make it with a rotisserie chicken. Much faster! - 3/5/09

    If you make your own chicken or turkey broth,you can make a day or two ahead and refrigerate. When you get ready to use the broth, the fat will be congealed at the top and is easy to take off and discard. - 3/5/09

    you can use white cooking wine(usually found on the aisle with the vinegars) which has the flavor without the alcohol. also I think the sodium has to be a misprint. - 3/5/09
