1 1/2 CUP OATS1 1/2 CUPS BUTTERMILK(OR DAIRY FREE CHOICE) (UNSWEETENED ALMOND MILK)1 CUP OAT FLOUR1/2 CUP RICE FLOUR1 TBSP BAKING POWDER1/2 TSP BAKING SODA1/8 TSP NUTMEG2 EGGS1/2 CUP MELTED BUTTER (OR SOY MARGARINE) ( I CAN'T BELIEVE IT'S NOT BUTTER LIGHT MARGARINE)2 TBSP HONEY1/2 CUP SLIVERED DRIED FRUIT (OPTIONAL)

MAKES 1 1/2 DOZEN

1. PREHEAT OVEN TO 400. GREASE MUFFIN TINS.
2. SOAK OATMEAL IN BUTTERMILK.
3. COMBINE REMAINING DRY INGREDIENTS, AND ADD WET INGREDIENTS, INCLUDING OATMEAL MIXTURE.
4. STIR IN DRY FRUIT SLIVERS AND FILL MUFFIN TINS THREE -QUARTERS FULL.
5. BAKE FOR 25 MINUTES OR UNTIL TOPS ARE GOLDEN BROWN AND CENTER IS SET.
