Ingredients
Directions
((This is my stepmother's recipe and you can add as many or as few of each of the ingredients that you want. I've never had a bad batch and I've made it several different ways.))2 large cucumbers4 Tomatillos2 cans diced tomatoes 2 Jalapeno Peppers (can be seeded or not!)1 Green Bell Pepper1 Med. Onions 1 large bunch Cilantro,2 Garlic Cloves1/2 bunch Parsley1/4 Salt to taste1/4 Pepperto taste1 Tbsp Sugar approx1 Tbsp Olive Oil approx1 Tbsp Vinegar approx
Chop all veggies, garlic, cilantro and parsley.
Mix well with sugar, oil, salt, pepper and vinegar.
((You can stop here, but I usually run it through a few pulses of the food processor because we like the less chunky salsa))
Have fun with it and change it up, you can't ruin it!!
Oh, I usually get about 3 1/2 - 24oz jars out of it and it lasts a couple of weeks around here :)
