Mediterranean Tuna Sandwiches

8 slices whole-grain bread1 packet of sunkist light albacore tuna in water1/3 cup roughly chopped drained oil-packed sun-dried tomato halves1/4 cup sliced ripe olives3 tablespoons low-fat mayonnaise2 teaspoons capers1/4 teaspoon freshly ground black pepper4 romaine lettuce leaves
Spray bread with extra virgin olive oil cooking spray (or brush each side with olive oil) and lightly toast in skillet. (Or you can put bread in toaster if you would prefer to not use any olive oil spray.)
Combine tuna and all other ingredients (except lettuce leaves). Place 1 lettuce leaf on each of 4 bread slices. Top the lettuce evenly with tuna mixture, and cover with remaining bread slices. Serve immediately.
