Banana Nut Oat Bran Muffins

3 cups all purpose flour, or all purpose whole grain blend flour1/2 cup oat bran1/2 cup light brown sugar1 Tbsp baking powder1/2 tsp baking soda1/2 tsp salt1/2 cup chopped pecans or walnuts1 1/2 cups plain lowfat or fat free yogurt1 1/2 cups mashed overripe bananas (about 3)2 large eggs, beaten1 stick (8 Tbsp) unsalted butter, melted
Preheat oven to 375 degrees. Spray a 12 cup muffin pan with nonstick spray. In a large bowl, whisk together the flour, oat bran, baking powder, soda, salt and nuts. In another bowl, whisk together the yogurt, eggs, bananas and melted butter. Pout the wet ingredients into the large bowl with the dry ingredients all at once. Stir together gently only until just blended, about 10-12 strokes.
Fill the cups nearly full. Bake at 375 degrees for 25 to 30 minutes or until golden brown. Makes 12 large muffins.
