Chicken with Savory Pan Sauce

12 oz boneless skinless chicken breast, pounded very thin1-2 T herbes de provence 1 tsp seasoning salt1 T garlic powder1 T olive oil, Cooking spray as needed1 shallot, minced1 clove garlic, minced3 oz wine, red or white1 T Dijon mustardPepper, to taste1 small pat butter
Season both sides of the chicken with seasoning salt, pepper, garlic powder, and herbes de provence.
In a skillet, heat olive oil over medium high heat until simmering.
Saute chicken until done, turning once, about 6 minutes.
Remove chicken and tent with foil to keep warm.
Saute shallots in the same pan you just cooked the chicken in.
Add garlic and saute until fragrant.
Deglaze the pan with wine, reduce by half.
Whisk in mustard and cook 1 more minute.
Stir in butter.
Pour over chicken and serve immediately. Great with sauteed spinach.
