1 pkg. (14 slices) Wellshire Dry Rubbed Peppered All Natural Uncured Bacon 40% less fat (whole Foods)14 Peppers, sweet or Jalapeno (your choice)1 cup Cottage Cheese, 2% Milkfat, 1 oz. Parmesan Cheese, grated,1/2 oz Cheddar Cheese, 1 tsp Cumin 1/4 tsp Cayenne Pepper
1. mix together cheeses and spices.
2. remove tops from peppers
3. fill each pepper with about 1 Tbsp of cheese mixture
4. replace tops to peppers
5. wrap each pepper with one slice of bacon, starting at the top to assure the bacon secure the top in place.
6. insert a toothpick in each pepper to secure bacon to pepper.
7. Grill over medium heat (preheated grill) until bacon is browned and crisp.
