Beef Chuck Roast, cubed1 cup or can of low fat beef broth1 cup of raw onions3 garlic cloves, coarsely chopped1 cup of red bell peppers, chopped2 large potatoes, cubed2 cups of frozen peas and carrots2 cups of mushrooms, pieces and stems1 cup of sweet corn1 tsp of black pepper or to tast1 bay leaf, discard after cooking1 tsp of whole all spice, remove after cooking
cut up beef, bell pepper, potatoes,and onions, place all ingredients into slow cooker. cover with water and slow cook at 230 degrees from 4 to 8 hours
