Low Calorie Whole Wheat Sweet Potato Pancakes

Ingredients
1 Large Sweet Potato mashed1.5 cup Whole Wheat Flour1 tbsp Baking Powder2 tsp Pumpkin Pie spice1/2 cup Splenda4 Egg Whites1 cup Water, tap1 cup 1% Milk1 tbsp Canola Oil
Directions
Chop sweet potato and biol in water in microwave for about 10 minutes. Drain and mash. Let cool while mixing all other ingredients. Mix in mashed sweet potato and mix.

Heat and lightly spray griddle or pan. ladle batter into 6 inch cakes. Makes about 10 six inch cakes, 2 per serving.
