Pineapple Teriyaki Turkey Lettuce Wraps

1/2 pkg of Jennie-O Extra Lean Ground Turkey (10oz)1 can (8oz) crushed pineapple in juice, liquid drained and reserved1/4 cup teriyaki sauce1 tbl cornstarch2 green onions, sliced (2tbl)1/4 cup diced red bell pepper1 can (8oz) sliced waterchestnuts, chopped6 Shitake mushrooms, stems removed, chopped
1. In 10-inch skillet, cook turkey over medium-high heat 5 to 7 minutes, stirring occasionally, until thoroughly cooked; drain and return to heat. (Optional-stir in salt and pepper to taste, this is not included in the calorie count as I don't use it)
2. Add red bell pepper, pineapple, waterchestnuts, and mushrooms. Cook 1-2 minutes stirring occasionally.
3. In small bowl, mix reserved pineapple juice, teriyaki sauce, and cornstarch. Stir mixture into turkey. Cook and stir until thick and bubbly, stirring frequently. Spoon mixture onto lettuce leafs or over top brown rice (lettuce and rice are not included in the calorie count).
Makes 3 1-cup servings. This recipe can easily be doubled to feed a larger family.
