Lemon-Splashed Shrimp Salad

Ingredients
8 C water2/3 C uncooked Barilla Plus - Rotini pasta1 1/4 lbs Large shrimp, peeled and deveined1 C halved cherry tomatoes1/3 C sliced Celery1 chopped peeled avocado1 chopped seeded poblano pepper2 T fresh cilantro sprigs2 t grated lemon rindjuice from 1 lemon1 T extra virgin olive oil1 t kosher salt (or to taste)Freshly grounded black pepper
Directions
Bring 8 cups water to boil in a large saucepan. Add pasta to pan; cook until almost tender. Add shrimp to pan; cook until done. Drain. Rinse with cold water, and drain well. Combine pasta mixture, and remaining ingredients; toss well. Serves 4 (serving size: about 1 3/4 cups).
